Executive chef Andris Salmanis is heating things up at City Cellar! Using a culinary blow torch, he lights up a giant 90 pound cheese wheel, adds fresh herbs, garlic and imported olive oil, then coats the fresh, house-made pasta with the creamy cheese sauce. Sommelier Gradon Thiebeault pairs the pasta with the perfect wine.
It was our first time at City Cellar but far from the first dinner service. In fact, it is the one of the only restaurants that has been at CityPlace in West Palm Beach since its inception. Known for its fresh ingredients, scratch kitchen and locally sourced, farm-to-table cuisine, City Cellar introduces a stylish pasta dining experience every weekend.
Starting off the evening with some Chilean wine
Meats cured in-house
Charcuterie Plate – Wagyu beef, truffled salami, prosciutto, cured duck, homemade strawberry jam, pickled veggies, honey and marcona almonds.
I really enjoyed the selection of meats and which were paired with delicious cheeses (not pictured). I found it fascinating to learn that cheeses have seasons and so, the selection changes seasonally for the meat and cheese pairing plate.
Now for the main attraction! You can see chef prepare this dish by visiting the open kitchen.
The pasta was made in-house 3 hours before we ate it! Chef finishes off the fettuccine dish by adding arugula / mixed greens and protein.
When we visited, the pasta was topped with cured duck breast but this varies.
