Fall/Winter Menu at db Bistro Moderne Miami by Chef Daniel Boulud – The South Florida Sage

We recently had the pleasure of checking out the new fall and winter menu items (plus cocktails) at db Bistro Moderne located at the JW Marriott Marquis in Downtown Miami. We were super impressed by what Executive Chef Clark Bowen and Chef Patissier Saeko Nemoto prepared. Check out our experience below!

Frose

Yes, the frozen-wine/slushie craze has made its way to Miami! The Frose made in a frozen drink machine with Rose, Blanc and Lillet Rouge. Not your style? Check out the other slushie drink called Autumn Chill, its made with ginger beer, bourbon, apple cider and chai tea!

Roasted Beets with Pears, Walnuts, Blue Cheese

We loved the presentation of this dish! It’s a next-level beet salad, very sophisticated. Tasty, too!

Quail Ballotine with Foie Gras, Porcinis, Sweet Potatoes

We weren’t sure what to expect from this dish, but found it to be surprisingly to our liking.

Diver Scallops with Fall Succotash, Parsley, Bacon Jus

Delicious! Scallops are my jam, or should I say, my jus.

Pumpkin Agnolotti with Chestnuts, Sage, Brussels Sprouts

The pumpkin agnolotti was definitely one of my favorite dishes of the evening although I think a light brown butter sauce on the plate would have been like the icing on a cake.

Pork Loin with Crispy Pig Eats, Mofongo, Black Bean

Wow! This dish is so quintessentially Miami and also creative, loved it.

Crispy Apple Confit with phyllo, apricot jam, brown sugar crumble and granny smith apple sorbet

This inventive apple dessert stood out to us with its pretty plating. The fresh sorbet was a major highlight.

This was our first time at db Bistro Moderne and we would recommend that you check it out. They have a really unique low level bar with a lounge plus indoor and outdoor dining.
