The Diplomat has recently undergone a culinary program revamp at the iconic resort in Hollywood, Florida. With a $100 million transformation, The Diplomat Beach Resort will be a high-energy destination resort, from coast to Intracoastal, offering multi-dimensional entertainment experiences!
The Diplomat Restaurant Group restaurants and bars will feature unique dishes and drinks and will highlight ingenuity and variety, using locally-sourced ingredients as often as possible. Each dining destination is rooted in strong culinary sensibilities, emphasizing brand individuality and creating distinct spaces and experiences throughout the resort.
The Ft. Lauderdale Bloggers recently took a food tour of 3 awesome restaurants located at the hotel where we got to try a variety of menu items from each. Check out our experience below!

First up, we stopped at Bristol’s Burgers, located at The Diplomat Landing Marina overlooking the Intracoastal Waterway, is a timeless burger joint with a modern day twist.
The first thing we saw before walking into the restaurant was this epic smoker, I knew right away we were in for some good (m)eats!
The menu features ingredient-driven burgers and a wide selection of starters, boozy and non-boozy milkshakes with house made ice cream, and a full bar celebrating throwback cocktails.
(L) Hollywood Brewing Pilsner
(R) Brass Monkey Milkshake with Peanut Butter Ice Cream, Candied Bacon, Banana and Caramel
The unique oval-shaped burgers, created using a proprietary signature blend of beef, are served on house-made sub rolls and accompanied by ingredient-driven toppings. A modern take on a fast-casual burger restaurant, Bristol’s Burgers features an open kitchen, surrounded by red leather booths and tables for both indoor and outdoor seating.
Smoked Buffalo Wings with Bleu Cheese
Oh man, a really fantastic flavor on these wings from the smoker and just the right amount of buffalo sauce.
Louis Wedge Salad with Chilled Jumo Lump Crab, Shrimp and Lemon
This salad may not look like anything out of the ordinary, but it actually was extraordinary. The crisp as can be lettuce, fresh seafood and the Russian? dressing set it apart.
Beer Battered Onion Brick with Grilled Lemon Horseradish Dip
This dish was actually an accident that turned into a staple menu item! Lemon horseradish dip? Yes please!
Smoked Boneless Rib Sandwich with Chopped Berkshire Spare Ribs, Creamy Red Coleslaw and Carolina BBQ Sauce
Ummmmmm there are no words, well maybe the word I used to describe it on Instagram, which was “obsessed”! I mean just look at it! It tastes as good as it looks.
The space also has an arcade off to the front of the restaurant, free for all guests to enjoy!
Next, we enjoyed tastings at the neighboring Portico Beer & Wine Garden Portico, located at The Diplomat Landing, is a waterfront beer and wine garden serving sharable, light Italian favorites with an exclusively on-tap beer and wine program. Portico offers old and new world wines, local craft beers, beloved imports and even a signature Americano cocktail, all on tap and served in 7 oz. pours, encouraging sipping, tasting and swapping.
Eggplant Bruschetta Milanese
So yummy! There was the perfect amount of breading on the eggplant.
Double Pepperoni Pizza with Roasted Garlic, Mozzarella and Tomato
The Portico experience is well suited to its location just steps away from the Diplomat Landing Marina, where in addition to gazing at the resident yachts, guests entertain themselves with outdoor games like ping pong, corn hole, and ring toss. Seating is both covered and uncovered with canopies draped throughout the area. Several styles of seating are available including Adirondack chairs, picnic tables and round tables, all offering guests different ways to lounge as they enjoy drinks and food.
Last but certainly not least we dined in the private dining room at Diplomat Prime is a luxury boutique steakhouse led by Executive Chef Nicolay Adinaguev. The restaurant boasts a reimagined menu of prime beef aged in-house, seasonally-driven seafood dishes, and select delicate fare.
The Wedge Salad – baby iceberg, bacon lardons, blue cheese, buttermilk dressing
Produce from Swank Farms is always a good sign, this was an elevated wedge for sure!
Shellfish Tower with Florida Stone Crabs, Jumbo Lump Crab Meat, Colossal Shrimp, Maine Lobster and Oysters
Have you ever seen more beautiful shrimp in your life? I haven’t, and lord knows I see plenty of food.
The beverage program includes a variety of old world and new world wines available by the glass and bottle, as well as an extensive list of cocktails designed to complement the steakhouse fare.
Tomahawk Steak
Watch a video of chef cutting this epic steak:
Lobster Mac & Cheese with scallion and manchego cheese
You must get this mac & cheese. Frankly, I find it difficult to find a good mac & cheese. It’s kind of like eggs, so simple yet so easy to mess it up.
Local Heirloom zucchini stuffed with quinoa, korean chili, lemon, basil, dill
A really great vegetarian dish indeed! Try it, you won’t be disappointed.
Octopus with edamame hummus, black olive, french feta, daikon radish
Inspired by the hotel’s iconic period through the 1950s, the design of the 108-seat restaurant incorporates elements of sophistication and playful femininity to a steakhouse space that historically had masculine overtones.
Set to open early 2017 at Diplomat
