Established in winter 2014, the former Old Calypso space has been transformed into an exciting new waterfront eatery and bar overlooking the Intracoastal Waterway in downtown Delray Beach with the arrival of Hudson at Waterway East. With a passionate motto of “Love Thy Craft,” this casually hip and trendy venue features unique spaces, including nooks for dining and socializing and an expansive covered deck, amid waterfront bliss. Serving an innovative culinary experience and a modern beverage program, Hudson seeks to be a new generation of waterfront escape that offers something for everybody.

Hudson’s new outside bar encompasses 1,500-square-feet of enticing food and beverage offerings served on the patio as well as special offers available exclusively at the new outdoor bar. Boasting the only bar on the East Coast with a sunset water view in Delray Beach, the new area has gorgeous views to accompany its exciting offerings. Stay tuned for a future announcement on their grand opening party.

“When we first saw this property, we were enamored, and now we are elated to present Delray’s only bar featuring a spectacular waterfront sunset view, something that will be of tremendous value to the city,” says Rita Wilson, co-owner of Hudson. “With a new outside bar, we will now be able to serve our high demand and growing popularity at Hudson, while guests now get a new space where they can step outside to enjoy Intracoastal vistas, order some delicious bites and sip on special brews.”

Recently spotted at Hudson was Hollywood icon Burt Reynolds, who reportedly drove all the way from Jupiter for Hudson’s sunset view.

Hudson also boasts a separate indoor bar — open between the hours of 11 a.m. to close — with a beverage program focused on small beer, spirits and wine producers; modern renditions of classic and original craft cocktails; and barrel-aged spirits including HUDSON Whiskey, the first pot distilled whiskey produced in New York after Prohibition.

Hudson features a menu of seafood-centric dishes with a focus on all-natural meats, local produce and fresh daily fish. Offerings range from soups, salads and shareable starters to sandwiches and entrees.

Newly appointed Executive Chef Paul Niedermann, who captivated audiences during his winning run on Hell’s Kitchen Season 9, brings with him vast experience in the restaurant industry. Prior to joining Hudson, Niedermann worked his way up the ranks in some of Florida and New York’s most prestigious restaurants such as 1200 Courtyard Grill at Biltmore Hotel, where he acted as Chef de Partie; St. Regis, where he was Lead Cook; Ritz Carlton’s Via Luna, where he held the position of Junior Sous Chef; and most recently BLT Steak in New York City where he was Chef de Cuisine, as well as BLT in the Hamptons.

From his vast culinary journey thus far, the chef brings with him extensive experience and expertise in a variety of cuisines, ranging from refined French to homey Italian. With his diversified exposure to various cultures, the chef’s culinary vision is distinctly eclectic and wholesomely marked by his South Florida roots, island and Caribbean flavors and overall lightness.

Sage Says: What an awesome spin on an oyster dish… its like, having an adult snow cone while walking on the ocean shore!

Roasted Local Snapper — San Marzano Tomato Fondue, Puttanesca Compote, Wilted Arugula, Thyme Polenta Cake

Sage Says: A really nicely composed dish, I enjoyed the Mediterranean influences, the kalamata olives and the yummy polenta cake accompanying the fish.

Delmonico Ribeye — Green Peppercorn Sherry, Roasted Fingerling Potatoes

Sage Says: This dish was the star of the evening, my favorite dish. It was bursting with flavor and just the right texture. The sauce was lick the plate good, the peppercorns were not overpowering and there were just the right amount of potato to let the meat shine.

Flourless Chocolate Cake — Salted Caramel Paint, Strawberry Ice Cream

Sage Says: This cake is a good option for those following a gluten free diet The consistency is dense like a fudge, it is a simple yet colorful dessert, although I would save the calories for something with a little more of a wow factor. Next time I will try the Key Lime Bars.
