Local Snapper Tiradito – aji amarillo & sweet potatoes

The tiradito was a perfect balance of sweet and spicy. I loved how the sweet potato and citrus worked so well together. This was one of my favorite dishes of the evening! So intriguing to the palate.

Vieux Carre Cocktail – Herby Michter’s rye whiskey, cognac, benedictine, angostura bitters, peychauds bitters

Part of Steak 954’s prohibition era drink menu! Drinks reflective of early 30’s and 40’s made mostly with booze, bitters and vermouth. Fitting for the ocean side location of the restaurant .

Lobster & Crab Ceviche with pickled coconut

What a great variation of ceviche! Plentiful with seafood, shaped like a tartar and complimented with red bell pepper to bring out red colors from the crab and lobster. I would like to see a touch more coconut flavor, perhaps a creamy coconut element, to bring this dish to the next level.

Pan Seared Scallops with baby heirloom tomatoes & bacon-cabernet vinaigrette

You cant go wrong with bacon and scallops! Make sure to eat those baby heirlooms – they add a beautiful acidity to the dish.

Jumbo Lump Crab Cake with herb aioli

Although one of the richer versions of a crab cake that I have tried, it was lightened with an unsuspecting salad of julienned granny smith apple with citrus, which worked fantastically to balance out the dish.

954 Cheesesteak – american wagyu ribeye, truffled cheese whiz & foie gras on a fresh baked roll served with Moet & Chandon Brut “Imperial”

Okay, so you were probably wondering by this point in my post: where is the steak? ! I went for something a bit untraditional to fill that requisite.. a cheesesteak!  The description had me on the edge of my seat as soon as I saw it on the menu. A dish that is served with champagne? Wagyu, truffle and foie gras all in one dish? Things  just don’t get much more epic than that.

Key Lime Baked Alaska with blackberry and kaffir lime soda

Not only is this a really cool looking dessert but it is also a party in your mouth. I enjoyed the contrasting textures and temperatures from the browned meringue and kaffir lime soda ice cream. The blackberry really amplified the dish with a color pop!
